Nestled in the historic town of Montepulciano, our cellars have a rich history, originally belonging to the 13th-century monastery known as the ‘Convent of Santa Maria dei Servi.’ Evidence of ancient use predates the monastery, with an Etruscan tomb situated at the cellar’s deepest point.
Carved meticulously from the limestone of Montepulciano, our wine cellar provides the serene environment in which our Vino Nobile wines gracefully mature. Within its confines, these wines age in tranquility, housed in 2500-liter barrels of Slovenian oak for a minimum of eighteen months. After the maturation phase, our wines are carefully bottled at our Poggi alla Sala winery. Here, they undergo an additional resting period of no less than six months, further refining their character before they are made available to the public.
