TASTING NOTES

PRODUCTION AREA: Poggio alla Sala – Montepulciano
GRAPES: Prugnolo Gentile (Sangioveses) 85%, Merlot 10%, Cabernet Franc 5%%
SOIL: Medium texture with layers of fine sands and silty clays with the presence of marine Pliocene sediments.
PLANTING SYSTEM: Spurred cordon – 4,500 vines per ha. Average age of screws: 20 years.
GRAPE PRODUCTION PER HA: 80 quintals.
MICROCLIMATE: The microclimate conditions are made favorable by moderate temperature variations throughout the year and the southern exposure of the vineyards. There proximity to the lakes of Montepulciano and Chiusi, as well as the Amiata and Cetona mountains, positively influence the climatic conditions of the area.
VINIFICATION AND AGING: After a soft destemming-crushing of the grapes, a slow maceration at a controlled temperature is carried out which lasts for 15-18 days. Numerous pump-overs are carried out daily they decrease as fermentation ends. Malolactic fermentation occurs spontaneously within the month of December. The refinement takes place for approximately 8/10 months in medium and small capacity oak barrels.
ORGANOLEPTIC CHARACTERISTICS AND COMBINATIONS: The colour is red bright ruby with garnet reflections, it has a typical and penetrating aroma with memories of ripe plum. The taste is soft, harmonious and pleasantly tannic. It matches perfectly with typical Tuscan appetizers and first course dishes, cured meats, red meats and cheeses.
