TASTING NOTES

PRODUCTION AREA: Poggio alla Sala – Montepulciano
GRAPES: Prugnolo Gentile (Sangiovese) 85%, Merlot 10%, Cabernet Franc 5%
SOIL: Medium-textured with layers of fine sands and silty clays, with the presence of Pliocene marine sediments.
TRAINING SYSTEM: Spur-pruned cordon – 4,500 vines per hectare. Average vine age: 20 years.
YIELD PER HECTARE: 8,000 kg of grapes.
MICROCLIMATE: The microclimatic conditions are favorable thanks to moderate temperature variations throughout the year and the southern exposure of the vineyards. The proximity to the lakes of Montepulciano and Chiusi, as well as to Mount Amiata and Mount Cetona, positively influence the area’s climate.
VINIFICATION AND AGEING: After gentle destemming and crushing, a slow maceration at controlled temperature is carried out for 15–18 days. Daily pump-overs are performed, gradually decreasing towards the end of fermentation. Malolactic fermentation occurs spontaneously by December. Ageing takes place for about 8–10 months in medium and small oak barrels.
TASTING NOTES AND PAIRINGS: Bright ruby red with garnet reflections, it has a typical and intense bouquet with notes of ripe plum. On the palate it is smooth, harmonious, and pleasantly tannic. Perfect with Tuscan appetizers and first courses, cured meats, red meats, and cheeses.
