GRAPE VARIETY: Sangiovese (PRUGNOLO GENTILE ) 100%
SOIL: Medium texture with layers of fine sands and silty clays with the presence of marine
Pliocene sediments.
PLANTING SYSTEM: Spurred cordon – 4,500 vines per ha. Average age of screws: 30 years.
GRAPE PRODUCTION PER HA: 50 quintals.
VINIFICATION AND AGING: After a soft destemming-crushing of the grapes, a slow
maceration at a controlled temperature is carried out in oak vats truncated cones that lasts for
16-18 days. They are carried out daily numerous pumping overs which decrease as fermentation
ends. There Malolactic fermentation occurs spontaneously within the month of December. The
Parceto is aged for 2 years in small capacity barrels and French oak barrels; followed by 6 months
in the bottle.
ORGANOLEPTIC CHARACTERISTICS AND PAIRINGS: Intense ruby red in color with
garnet tones, it has a typical and penetrating aroma with spicy notes coming from the wood. The
taste is complex, harmonious and persistent. It pairs perfectly with red meats, game and mature
cheeses. Recommended uncorking the bottle two hours before serving or decanting it into a carafe.
