<strong>ALLEVAMENTO DELLA VITE</strong>: Guyot e cordone speronato – 3.500 ceppi per ettaro. Età media delle viti in produzione: 30-40 anni.<br />
<strong>PRODUZIONE PER ETTARO</strong>: 5 q.li.<br />
<strong>MICROCLIMA</strong>: Le temperature moderate durante tutto l’anno e l’esposizione dei vigneti a sud creano condizioni microclimatiche favorevoli. Inoltre, la vicinanza di tre laghi, Montepulciano, Chiusi e Trasimeno, e di due monti, Amiata e Cetona, ha un&#8217;influenza positiva sul clima locale.<br />
<strong>PROCESSI DI VINIFICAZIONE</strong>: Le uve vengono accuratamente selezionate e poste ad appassire su graticci per circa quattro mesi prima della pressatura. La fermentazione avviene in piccoli caratelli che vengono sigillati con la “madre” per un periodo minimo di cinque anni.<br />
<strong>CARATTERISTICHE ORGANOLETTICHE</strong>: Il colore è ambrato; il profumo è intenso e complesso, con sentori di uva passa e canditi. Il sapore è pieno, dolce, elegante e persistente.<br />

<strong>VINIFICATION AND AGEING:</strong> After gentle destemming and crushing, a slow maceration at controlled temperature is carried out for 15–18 days. Daily pump-overs are performed, gradually decreasing towards the end of fermentation. Malolactic fermentation occurs spontaneously by December. Ageing takes place for about 8–10 months in medium and small oak barrels.<br />
<strong>TASTING NOTES AND PAIRINGS:</strong> Bright ruby red with garnet reflections, it has a typical and intense bouquet with notes of ripe plum. On the palate it is smooth, harmonious, and pleasantly tannic. Perfect with Tuscan appetizers and first courses, cured meats, red meats, and cheeses.<br />

<strong>GRAPE PRODUCTION PER HA:</strong> 50 quintals.<br />
<strong>VINIFICATION AND AGING:</strong> After a soft destemming-crushing of the grapes, a slow<br />
maceration at a controlled temperature is carried out in oak vats truncated cones that lasts for<br />
16-18 days. They are carried out daily numerous pumping overs which decrease as fermentation<br />
ends. There Malolactic fermentation occurs spontaneously within the month of December. The<br />
Parceto is aged for 2 years in small capacity barrels and French oak barrels; followed by 6 months<br />
in the bottle.<br />
<strong>ORGANOLEPTIC CHARACTERISTICS AND PAIRINGS:</strong> Intense ruby red in color with<br />
garnet tones, it has a typical and penetrating aroma with spicy notes coming from the wood. The<br />
taste is complex, harmonious and persistent. It pairs perfectly with red meats, game and mature<br />
cheeses. Recommended uncorking the bottle two hours before serving or decanting it into a carafe.<br />

<strong>GRAPE VARIETY:</strong> 100% Sangiovese<br />
<strong>SOIL:</strong> Of Pliocene origin, medium-textured with layers of sand and silty clay,<br />
with the presence of pebbles.<br />
<strong>VINE TRAINING SYSTEM:</strong> Spurred cordon – 4,400 vines per hectare.<br />
Average age of vines in production: 20 years<br />
<strong>ALTITUDE:</strong> 300 meters a.s.l.<br />
<strong>GRAPE YIELD PER HECTARE:</strong> 70 quintals.<br />
<strong>MICROCLIMATE:</strong> The microclimatic conditions are favorable due to moderate<br />
temperature variations throughout the year and the southern exposure of the vineyards.<br />
The proximity of the lakes of Montepulciano, Chiusi, and Trasimeno,<br />
as well as Mount Amiata and Mount Cetona, positively influence the area&#8217;s climate.<br />
<strong>VINIFICATION AND AGING:</strong> The grapes, harvested exclusively by hand into crates,<br />
are placed on a sorting belt for an additional visual inspection before being gently destemmed.<br />
The whole berries are then transferred into stainless steel fermenters, with a maximum<br />
capacity of 50 hl. The must undergoes a slow maceration lasting 25–28 days at a controlled<br />
temperature that never exceeds 28°C. Daily pump-overs are carried out, gradually reduced<br />
as fermentation progresses. Malolactic fermentation occurs spontaneously by December.<br />
A mandatory aging period of three years follows, in medium-capacity 25 hl Slavonian oak<br />
casks and small fine-grain French oak tonneaux. This is followed by further bottle aging<br />
for at least 12 months.<br />
<strong>ORGANOLEPTIC CHARACTERISTICS:</strong> Deep ruby red with garnet highlights.<br />
Elegant and complex on the nose, with typical aromas of ripe red fruits<br />
well integrated with spicy notes from the oak and a hint of balsamic nuance.<br />
On the palate, it is harmonious, complex, and persistent.<br />
Perfectly pairs with red meats, game, aged cheeses, and traditional Tuscan dishes.<br />
It is recommended to open the bottle two hours before serving or to decant it.<br />
Serving temperature: 18°–20°C.</p>
